THERE’S a new hangout for those who want to view Manila Bay’s famed sunsets as Conrad Manila formally opens its doors today. The reception area on the third level is one place to catch nature’s stunning display, but there’s also the C Lounge on the same floor where guests can unwind with a cocktail in hand.

The long, slightly narrow space is designed in such a way that guests have a view of the bay wherever they may be seated. An alfresco area might remind one of the classy bars overlooking Hong Kong’s harbor.

Brasserie on 3, the hotel’s all-day dining outlet, offers buffets and a la carte dining by executive chef Thomas Jakobi. At a preview lunch held weeks ago, the chef came up with inspired pairings of seafood, meat and vegetables including one with cubed tuna and dill foam.

His innovative menu focuses on seasonal produce with organic, locally- and sustainably-sourced ingredients. In fact, the hotel has planted an herb garden on the roof that supplies the kitchen’s fresh rosemary and basil, among other plants.

Jakobi oversees the hotel’s in-room dining operations and the three specialty restaurants—Brasserie on 3, C Lounge and China Blue by Jereme Leung. Unlike traditional Chinese restaurants, China Blue has a more contemporary look and menu. Also located on the third level, it has five elegant private rooms that can seat from eight to 18 guests.

The mid-rise Conrad Manila, designed by Singapore-based Wong Chiu Man of WOW Architects, has floor-to-ceiling glass windows at the reception, C Lounge and other public areas for clear, unobstructed views.

The interiors, however, are a different story. Project director Nestor  Jardin and his team collated an impressive art collection of 635 works by Filipino visual artists. Over 200 are original works, while 415 pieces are replicas or reproductions.

The pieces are placed on prominent display throughout the hotel—at the elevator lobbies and the executive lounge, as well as in the 347 guest rooms.

The first two floors are devoted to the hotel’s retail podium, S Maison, a mix of commercial and dining outlets and three cinemas. Conrad Manila is SM Investments Corp.’s entry into the luxury hotel segment through SM Hotels and Conventions Corp. and its operator Hilton Worldwide.
