This popular dish from Sichuan is tofu steeped in a spicy chili and bean-based sauce, an often paper-thin, oily and bright red suspension, which is sometimes prepared with fermented black beans called douchi and minced meat. It has such a distinct flavor and a “mouth-numbing” spiciness that people there love so much. There are multiple variations to this dish as well, some made to appeal to vegetarians by excluding meat and adding water chestnuts, onions, other vegetables, or wood ear fungus.

 

Laksa: Malaysia

 

This soup dish popular in Malaysia mixes Chinese and Malay cuisines in one delicious, spicy meal that really fills you up while sparking a fire in your tongue. Laksa consists of rice noodles/vermicelli mixed chicken or seafood (prawn or fish) served in a spicy soup that has a base of rich curry coconut milk or sour asam (tamarind).

 

Bicol Express: Philippines

 

The Bicol region in the Philippines is well known for its spicy dishes. One dish that holds its name is Bicol Express, a popular Filipino dish made with chilies, coconut milk, shrimp paste, onion, pork and garlic. The dish is named after a passenger train service from Manila to Bicol.

 

Indian Curry: India

 

Each type of curry is different and delicious in its own unique way, but the original Indian curry is where it all started. This dish hails from the aforementioned India and is another well-known food that is packed with flavor and a spiciness that dances in the mouth.
