Galantina in a Loaf
What: Traditional chicken galantina reinvented as a loaf made of lean ground pork, chorizo de bilbao, cheese, olives, special spices, raisins, peas, olive oil and red wine. A layer of deboned chicken thigh sits in the middle of the loaf, served with raspberry sauce to bring this traditional Christmas dish to a different level.
Another must-try is Chorizo and Olives Pasta, flat noodles mixed with a hearty tomato-based pasta sauce made with olive oil, lean ground pork, chorizo de bilbao, mushrooms and olives, and perfumed with red wine. It’s best served with green salad and bread.
