People wanting to try Hong Kong’s popular Kam’s roast meats can do it right here in Manila, when Kam’s Roast Goose opens at Mega Fashion Hall, SM Megamall, on May 15.

FooDee Global Concepts is bringing in Kam’s Roast, the latest on the list of Michelin-star restaurants it will open in the country. The others are Tim Ho Wan, FOO’D, Tsuta Ramen and the soon-to-open Hawker Chan.

FooDee Global Concepts president and chief operating officer Eric Dee discovered Kam’s Roast by accident.

“I was staying in a hotel (in Hong Kong) that was walking distance from Kam’s,” he recalled. “And I’d see lines form outside. I didn’t even bother to check what it was. On my last day, I decided to check it out. I walked in and had one of the best roast meals I’ve ever had.”

It was love at first bite. After the restaurant was given a Michelin star, Dee decided to propose a business relationship.

“We like dealing with affordable luxury brands with an instant recognition among Filipinos, and are of great value and quality, with the pedigree to back it up,” said Dee. “We listen to what people want, and I think Manila has been craving for an authentic Hong Kong roast specialty restaurant.”

Loved by many, Kam’s wasn’t an easy conquest. Dee pointed out he had to compete with 10 other local companies for the brand. This is Kam’s first franchise outside of Hong Kong.

“Having dealt with the most number of Michelin-star restaurants in the country gave us an edge,” said Dee. “Luckily, the principals saw our operational strength and trusted us with their brand. Now it’s our turn to prove that we are the right choice.”

Kam’s main attraction are the Hong Kong roasts Filipino travelers have grown to love: roast duck, crispy pork and char siew, barbecue, Iberia and toro, as well as soy chicken and suckling pig.

Unfortunately, the roast goose won’t be available just yet as Dee’s group tries to find a way to bring it in regularly.

For P300 to P400, customers can enjoy their choice of rice topping, enough for a single, satisfying meal.

Dee said that “90 percent of the menu will be the same, but there are some items we had to localize and adjust to suit our needs.” —CONTRIBUTED
