MANILA, Philippines–We often encounter the word “spin-off” in animated series and movies, but we seldom do in restaurants and in the food industry in general. But somewhere in the metro, along the 6th level of the Shangri-La Plaza in Ortigas Center is the Minerva Cajun Shack, a new offering of Murray’s New Orleans in the form of a full-blown, stand-alone restaurant.
At first glance, Minerva’s place will appeal inviting and welcoming to passersby. Its design arouses curiosity and sparks the interest as it looks distinct and, if the word can be considered appropriate, “adorable.” This, however, is just the first facet of the restaurant.
Once diners travel a little deeper into the place, they will find a red-lit area adorned by benches, tables, and vintage records. This part of Minerva, you can say, caters to the younger crowd that seek a dining experience they don’t encounter on a regular basis.
The menu on the other hand offers dishes that are vibrant both in color and in taste.
Besides the deep, rich flavor brought by spices imported all the way from New Orleans, each Minerva meal also has a subtle spicy kick which makes every one of them feisty in their own unique way.
Minerva also boasts ingredients that are freshly prepared — a day before production in the kitchen according to Minerva’s Chef de cuisine, Peter Ayson.
Soulful dishes
Chef Ayson shared with INQUIRER.net that apart from producing something new, he also wants to make something that is “more soulful.” He believes that each meal offered in Minerva should be a unique experience for the people. Through his South American-inspired dishes, for example, he aims to make Minerva diners experience the South American culture and even the cities.
But when asked why Minerva has a shorter menu compared to others, Chef Ayson said he’d “rather have a superior product than madami (plenty).” The Chef who loves to explore and innovate says he puts premium on consistency and that he doesn’t want to do anything half-baked.
Continuous development
Despite his satisfaction in the current Minerva menu, Chef Ayson still looks forward to developing dishes that will “break the barrier.” He was pertaining to state of the art meals that will not compromise health in the process.
And when asked how he feels about comparisons coming from customers, Chef Ayson says that he doesn’t take it negatively. According to him, he likes comparisons as it allows him and his team to continuously improve their expertise in their craft.
