IMAGINE living in a high-rise condominium where you can savor dishes crafted by some of the Philippines’ most passionate young chefs and restaurateurs. This lifestyle is now possible at Signa Designer Residences in Salcedo Village, Makati City.
Robinsons Luxuria’s pioneering condominium enclave is home to a selection of restaurants that aims to satisfy the discerning palate of residents as well as the city’s highly accomplished urbanites.
Sabao, Sprout and Bait’s, from Mothership F&B Enterprise, were chosen by real estate developer Robinsons Land to serve as centerpiece of Signa Designer Residences’ mixed-use, ground-floor retail strip. Behind them are chefs Francesca “Cheska” Cariño and Joseph Margate and Mothership F&B co-owner Erwan Heussaff.
At Sabao, Cariño presents much-loved Filipino soups with a twist. “We’re not trying to reinvent the wheel,” she said. “It’s still the traditional sinigang but just making it a little different in terms of taste and presentation.”
At Bait’s, Margate’s edge lies in exploring new flavors and combinations, inspired by the changing seasons and the best that nature has to offer. After all, this is what the Eleven Madison Park alumnus and Food and Wine Magazine’s Best New Chef nominee for 2012 has been known for.
Bait’s has a “market-driven” menu that offers the Filipino palate a unique gustatory experience in a New England-meets-hip-San Francisco atmosphere. A sought-after dish at Bait’s is the specialty tilapia marinated in fish sauce, turmeric and other spices. It is served with Vietnamese Nuoc Cham dressing and fine cauliflower couscous for a well-balanced flavor.
Margate’s personal favorites are the Spicy Tuna burger and the Pickled Oysters with Kimchee Puree.
Sprout is now known as the first quick, to-go self-service restaurant that serves fresh healthy fare. “What we’re really trying to push is a more fresh and convenient eating, as opposed to having fast food all the time,” Heussaff said.
Bestsellers of the house include salads, wraps and sandwiches, while specialties include the potent energy shots such as Ginger Jab and Spice Market. One of Heussaff’s favorites is Spicy Tuna Chirashi Bowl.
The prime location of Signa Designer Residences redefines the experience of lunch breaks, after-office leisure activities, and even weekends with family and friends. Heussaff’s group is more than happy to take advantage of the burgeoning culinary scene in the locale.
“Salcedo Village is slowly drawing in more crowds. Working with Robinsons Land was a great opportunity to build our brand. It was really a natural choice for us,” he said.
With the first tower already being turned over to unit owners, the upscale community is taking shape and drawing in discerning professionals, executives and foreign nationals.
Signa Designer Residences is owned and developed by Robinsons Land Corp. and Security Land Corp., with HLURB License to Sell No. 26942.
