Guests can enjoy a lavish buffet spread at Summit Ridge’s Grand Ballroom on Christmas Eve.
For starters: Cream of Pumpkin Soup with roasted chestnuts; Choritos en Balsamico; Herb-Roasted Marble Potatoes; and Tinapa Balls.
Other appetizers: selection of cheeses and assorted greens with choices of balsamic vinaigrette, Thousand Island and ranch dressing.
For main dishes: Osso Buco, Chicken Cacciatore, American-Style Pork Barbecue Ribs, and Baked Mahi Mahi fillet with orange dill beurre blanc that can be complemented with steamed or pilaf rice, truffle mashed potato or vegetable melange. There’s a pasta station and a carving station for Salt-Baked Norwegian Salmon and Porquetta.
Desserts: crème brûlée spoons, mango panna cotta, chocolate mousse and warm bread pudding with Nutella sauce.
New Year’s Eve’s dinner buffet will include Roast Beef with mushroom sauce, Tuscan Chicken Casserole, Beer-Battered Fish with Garlic Aoili Dip, and Pork Medallion with Red Wine Reduction.
At the Holiday Sweets Corner, there will be a decadent chocolate fountain.
Musical numbers on Christmas Eve will be provided by the Groomsmen.
