Souv by Cyma is the new restaurant to get your Greek fix.
Super checked out the restaurant that serves variations of traditional Greek barbecue called “souvlaki,” basically grilled meat in skewers.
At Souv, one can have grilled meat as a wrap or salad, or in a quinoa bowl. Lamb comes with yogurt and pickles. Chicken has Greek ranch dressing, fennel and orange segments. Pork is paired with minted tzatziki (Greek yogurt dip), cherry tomatoes and feta. Vegetarian option includes sweet potato, garlic yogurt, walnuts and Kalamata olives.
Roby Goco, the chef who has established the well-loved Cyma Greek Taverna, says diners have found comfort in his Mediterranean cuisine created using the “Spool” philosophy.
“‘Spool’ stands for salt, pepper, olive oil, oregano and lemon—the key ingredients of Greek cooking,” he explains.
These can be found especially in the Mezzes or appetizers such as the Hummus, Tirokefterri creamed feta, and layered Greek Nachos.
The Grilled Sous Vide Octopus with parsley salad is quite yummy, as well as the Sticky Chicken Wings with harissa yogurt dip.
Moving on to the mains, make sure to try out the Lamb Yiouvetsi—even if you don’t like lamb. It is super tender baked lamb served on a bed of delicious orzo (rice-shaped pasta) cooked in a round dish, resembling a paella.
Pork chops can be had with a choice of rice-stuffed bell pepper, juicy potatoes or fries. We also love the freshly grilled whole-fish grouper (lapu-lapu) served with clams and tangy olive oil-lemon sauce.
Souv is “all about every day Greek food served in a fun and modern setup,” Goco explains.
True enough, the store sports a laid-back Santorini look. Interiors are done in Greek blue and white, with some touches of bright yellow. The paper menu covers one oversized page, all-in. Ambiance is welcoming and progressive, and the food, always pretty.
Cranberry Grains Salad, for one, is a quirky salad with lentils, cilantro, red onions and cranberries in cumin-honey yogurt dressing.
The delectable lamb burger has ground lamb patty, with smoked gouda and fig onion jam, with a side of oregano-feta fries. The Prawns and Shellfish Makaronada spaghetti tastes as good as it looks.
Tip: On the table are unassuming grainy red condiments in little cork bottles. This is chili-lime salt which goes well with everything—it just ties all the flavors together.
Yogurt and cocktails
For dessert, Souv serves authentic Frozen Greek Yogurt. Among the toppings are Bukidnon Wild Flower Honey, Crumbled Baklava & Honey, and Fig Jam. Go all out adventurous and order the one flavored with Extra-Virgin Olive Oil and Sea Salt.
Want a bit of buzz? Cocktails are served all day, such as the Melon and Burnt Rosemary, Burnt Lemon Santorini Donkey and Vineyard Lemonade with wine.
House wine is also available in red, white and rosé—or just get all three as a sampler, to mix and match with your meal at Souv, which is really Cyma gone extra.
