With many delicious food to eat out there, here are three more to add to your favorites list.
Bicol Express Potato Chips
These proudly Philippine-made, world-class potato chips are bursting with flavor. Every chip is an expression of what many of us like to eat—a bit salty, a tad sweet, a tinge of chili and, to finish, a lingering richness from thick coconut cream. This product is the perfect expression of Bicol Express in potato chip form.
Credits go to John Wong, his mom Christine, and partner Catherine Cancio. The trio started Crackle Snacks (formerly CrackleChips) in October 2016.
Crackle Potato Chips are sliced by hand and cooked to a crisp, golden brown. It uses only Benguet potatoes to support local farmers.
Crackle Bicol Express Chips are sold in bazaars (tel. 09176803777 and 09209813777); follow on Instagram and Facebook @cracklesnacks
Taco Lumpia
Apart from the chips, I have also been enjoying Bettina del Rosario’s Taco Lumpia.
Sold frozen and ready to eat in minutes, her taco lumpia is tasty. It’s comfort food made of ground beef, seasonings and cheese, wrapped in lumpia wrapper.
Bettina says cooking is her way to be productive despite her limitations. Being physically challenged wasn’t going to stop her from doing what she loves.
Bettina sold lumpia during her college days. She was supplying small bars in Makati. However, she had to undergo a brain operation right after giving birth, which left her half-paralyzed.
It took 10 years of physical and all sorts of therapies to get her to a better state.
Though she now has people to help her with the prep work and wrapping, Bettina still pursues cooking with passion. “I still do the actual cooking and tasting,” she says.
How I enjoy my taco lumpia: wrapped in iceberg lettuce; with a bit of hot sauce; a dollop of sour cream (to 1/3 cup of sour cream, add 1 tsp of garlic paste, a bit of lemon juice and a pinch of salt); and salsa (made with chopped onions, tomatoes, coriander, a drizzle of olive oil, a spritz of lemon, seasoned with a bit of salt and pepper).

Truffle Love N’ Cheese
Patricia Feraren owns and manages a preschool in BF Homes. The Ferarens are a family of truffle lovers. Thinking of something special to give as tokens for Christmas, she and her kids toyed with the different ways they enjoy truffle. They christened it Callie’s Truffle Love N’ Cheese, after Pat’s youngest daughter.
The product is a dip, spread and sauce in one. I like it with Fita crackers.
Thanks to my dear Dimple Lim for this discovery.
