Known for its relaxed ambience, food for sharing and friendly service, Enye by Chele Gonzalez, a Spanish restaurant curated by Chele, is a collaboration of Crimson Resort & Spa Mactan and the highly recognized Chef.
To mark its 18th month of serving authentic Spanish fare, Chele is back in Cebu to introduce a selection of new traditional dishes which should be in everyone’s must-try list and a number of Chef’s creations highlighting the restaurant’s innovative spirit.
Staying true to its roots, the traditional section of the menu will hold comfort food, the chef’s favorite tapas, family heirloom recipes, and classic Spanish favorite dishes. The crowd favorite Paella Negra is getting an upgrade in flavor and ingredients. Now topped with scallops and grilled octopus, there’s more meat and flavor in every bite.
A new addition to the menu, which can easily be a new favorite is the Cordero Asado de Manera Tradicional, a slow braised lamb shoulder with rustic roasted potatoes and greens perfect for sharing between two individuals.
Apart from the traditional selection, the new menu will also highlight the Chef’s Creations. A modern approach to Spanish cuisine influenced by the global culinary trends at the same time integrating the resort and Chef’s advocacy of using fresh local ingredients.
The white snapper fish and scallop ceviche which has tigers milk, coconut, and curry espuma has refreshing and light flavors and highlights the fresh produce of the region. This will also most likely rival the popularity of the Cebu Lechon Tacos, which by the way is a must try for those who are dining in Enye for the first time, as it embodies the modern cuisine of the restaurant.
“Our vision has always been to elevate Cebu’s dining scene. We strive to provide both our international and local guests exclusive experiences that will make them want to always come back to Crimson. Having Enye offer guests with a dining experience that’s unmatched in the region is a major accomplishment for us” shares Crimson’s General Manager Didier Belmonte.

Enye by Chele Gonzalez features a wine cellar with old and new wines, a charcuterie room and show kitchen allowing guests to enjoy the experience from preparation to table service. It is located at the lobby level of Crimson Resort & Spa Mactan and opens daily for dinner from 6:00pm to 10:30pm.
