Cooking genes, a spicy tuna kit, and zen-like cold soba | Lifestyle.INQ

OCTOBER 27, 2022

When it’s in the genes it’s in the genes. I myself have learned my skills from a grandmother, a grandfather and an aunt. More precious tricks of the trade than any school can give. So today I share some offerings I’ve come to love and crave for from an uncle and niece who share a passion in the kitchen.

Chef Gilbert Pangilinan of Kai Greenbelt has his latest kit of spicy tuna which is quite literally—the bomb, pun so very intended.

Chunks of very fresh tuna, a special spicy mayo dressing, crunchy cucumbers, with trimmings of aromatic garnishes, wasabi, togarashi (Japanese chili flakes) and your choice of nori (seaweed sheets) to wrap or home made prawn crackers to scoop the party-in-your-mouth-spicy tuna delight. I’ve got nothing more to say but please, order now.

Then there is Selina Ocampo of MISE. She is Chef Gilbert’s niece who is quite the ingenue in the kitchen. She started with her unique galette kits which have a wide offering of onion and goats cheese to smoked salmon and more.

But the real star of the show for me are her cold ginger peanut soba noodles. A very healthy and delicious offering and one of the best kits I’ve had to make.

Assembly had a very meticulous zen like feel and the only cooking you do is to boil the soba noodles for about three minutes before shocking it in an ice cold water bath. Garnishing come neatly packed in their own cases with very clear written instructions.

So get ready to play around with plating the cucumbers, tomatoes, radish and mushrooms in a well coated sesame oil and tangy peanut dressing infused soba noodle delight. Don’t forget to be generous with the toasted sesame seeds and sriracha for heat. This offering is both healthy and filling. And just like her uncles tuna kits, I suggest you order this now, too!
