RECIPE: Nicole’s Chicken Pot Pie

This is a favorite at home. My kids love it, friends request for it and it’s so easy to make once mastered. It’s a one pot meal that is complete and will impress any one at any time. The key is to really make the taste of the thyme come out. This beautiful dish will have you giving restaurants a sure run for their money. It’s got a great holiday feel too! So start practicing.

1/2 kilo chicken breast fillet cut into small cubes

1 big white onion, chopped

1 small carrots, cubed

2 small potatoes, cubed

2 celery stalks, sliced less than 1 cm

1/3 cup frozen peas or corn kernels

4 tbsp butter

2 tbsp flour

1 tsp. dried thyme or 6 sprigs fresh

1 1/2 cup chicken stock

Cooking cream to your desired consistency

salt & pepper

Sauté onions till translucent, add the celery next and sauté for a few more minutes. Then add cubed chicken salt & pepper. When chicken becomes white on all sides, add the carrots and potatoes then pour in your chicken stock. Simmer till cooked.

While chicken simmers, make a roux by melting butter and adding thyme till fragrant. Then add flour mixing constantly till it thickens. Add to the chicken mixture to give it a thicker texture then add your cooking cream till your desired consistency. Adjust seasonings with salt & pepper. Serve warm with puff pastry square over, beside or on top of it.

Get creative by adding parsley, chili flakes or sprigs of thyme to make you look like that kitchen diva that you are!
