WATCH: Make flourless banana and eggs pancakes in just one minute

You’d be hard pressed to find anyone who doesn’t love a good pancake. In fact, I’ve got a Laura Ingalls Wilder book from the ’30s which devotes an entire chapter to extolling the virtues of stacked pancakes as a breakfast food.

However, pancakes are usually not that healthy, which is concerning if it’s your first meal of the day. Flour, which is used in most pancake mixes, can cause blood sugar spikes, especially in its enriched form (here’s a tip: if something’s been heavily processed, it’s not going to be good for you). It doesn’t help that most people practically coat their pancakes with butter and maple syrup.

Thankfully, with the help of Booky’s Ben Wintle, we’ve whipped up a quick pancake recipe that requires zero flour, and only takes a minute to make. Note: the recipe is for a single pancake, multiply it if you want to make a stack.

INGREDIENTS

Bananas

Eggs

Chia seeds (optional)

Nuts and berries

PROCEDURE

1. In a bowl, mash the bananas.

2. Mix the eggs into the mash.

3. Sprinkle on the chia seeds. Mix.

4. Pour onto the pan, and fry until golden brown.

5. Top it off with nuts or berries.
