The 2019 F&B Summit: Illustrating sustainability’s enduring role in social change and entrepreneurship

Built around the concept of sustainability, the third annual F&B Summit on Nov. 12, from 1 p.m. to 5 p.m. at the Power Mac Center Spotlight in Circuit Makati will be headlined by keynote speakers Mark Ocampo of Auro Chocolate, Hindy Weber of Holy Carabao Farms, Eric Dee of Foodee Global Concepts, and Michael Ziemer of City of Dreams Manila—all of whom will construct discussions on the necessity of sustainability today. 

Sustainability has been the subject of the foodservice, agriculture, and hospitality industries’ most recent initiatives, taking on the role of both a necessary business practice and a buzzword. This year’s F&B Summit is about resharpening the industry’s focus on environmental, economic, and social awareness via panel discussions moderated by broadcast journalists Pinky Webb and Karen Davila and F&B Report editor Eric Nicole Salta. 

In part because of the worsening climate crisis, at the center of all this are the farmers and producers working to champion more environmentally-friendly and socially aware practices and technologies—the discussion of which will be led by Philippine Culinary Heritage Movement founder Jam Melchor, Elements of Tomorrow’s Gio Espital, Chen Yi Agventures’ Patrick Renucci, and Kai Farms’ Karla Delgado. 

Emerging consumer behavior trends, specifically the increasing demand for sustainable living and how they tie into the future of the hospitality industry will be explored by Sheraton Manila’s Anna Vergara, Diamond Hotel’s Vanessa Suatengco, Dusit Thani Manila’s Stanley Lo, and The Peninsula Manila’s Jose Luis Jimenez.

Rounding out this roster of panelists are the chefs and restaurateurs whose mission to build and sustain F&B brands has become inextricable from surrounding environmental, social, and economic forces are Mendokoro Ramenba’s Ryan Cruz, Steak Room Concepts’ Elbert Cuenca, and Sweet Ecstasy’s Al Galang. The Standard Group’s culinary director and last year’s panelist Nicco Santos returns to complete the chefs and restaurateurs panel.
