Inspired by the flavors of southern France and Spain, chef Guillaume Roget will present his five-course dinner paired with fine wines on a three-day dining experience at Raffles Makati’s restaurant—Mirèio.
The menu will feature torched rare and wild new Caledonian blue prawn, broccoli emulsion, mushroom, and pine nut broth; pan-seared French foie gras, chestnut and lemon verbena-scented Jerusalem artichoke purée; grilled sea bass, chorizo Iberico enhanced razor clams, crunchy cauliflower risotto; Australian wagyu beef tenderloin celeriac confit, sweet onion foam, périgord black truffle; and chef Roget’s coffee and chocolate “conception.”
Driven and guided by his passion for the craft, self-taught Roget draws his inspiration from his Basques-Souletines roots paired with his mastery of wine. He began his career as a sommelier for acclaimed Michelin-starred restaurants such as Ruffet, le Mas de Candie, and Les Freres Ibarbour.
The dinner will be available from Nov. 27 to 29, 6:30 pm onwards for P6,800 per person.
