Miko Calo is definitely making her moves.
Since her departure from Metronome, the talented chef’s recent movements—most significant of which are her residency at Sage Bar in Makati Shangri-La with an all-female team and a steak pop-up at The Grid called MediumWellDone—suggest someone at peace yet ready to pounce on what’s next.
Now, Calo is taking it further with a striking one-night-only collaboration series every Monday from Nov. 18 to Dec. 9 with some of the best chefs in the Philippines. Called the Avec Series, Calo is partnering with Nicco Santos, Quenee Vilar, Aaron Isip, Josh Boutwood, and Margarita Forés to “serve up the very best dining experience with a sizable amount of fun.”
And that’s something you can expect from Calo as the idea of collaboration constantly ripples and radiates from her personal ethos.
“I’ve been lucky to work with some of the best people in the restaurant industry, and I’m even more grateful to count many of them as friends,” says Miko Calo. “Since I’m here doing this residency at the Makati Shangri-La, I thought, ‘why not bring them along for the ride?’”

Kicking off the dinner-only series tonight, Nov. 18, is Santos and Vilar who are also in the process of opening their “community restaurant” Celera in the first quarter of 2025. Kasa Palma’s Isip rounds out the series this month (Nov. 25) before Boutwood (Dec. 2) and Forés (Dec. 9) ring in the Christmas month respectively.
The limited time chef collaboration series adds even more heft to Calo’s “groundbreaking” Sage Bar residency where she invites us into a world beyond what she’s already showcased at Metronome. The cooking remains rooted in French techniques but plucks inspiration from memories and food she sentimentally enjoyed as a child.
