Organic gourmet cooking at The Maya Kitchen | Lifestyle.INQ

OCTOBER 27, 2022

On September 28, 9 a.m.-1 p.m., chef Robby Goco of the Cyma Greek Taverna restaurant chain will launch a new dining concept and hold a cooking demo at The Maya Kitchen.

Some of the dishes he’ll prepare are inspired by Green Pastures, his latest restaurant that features farm-to-table cuisine. This means the dishes will be prepared using all-organic, local, antibiotics-free, vine ripened and unprocessed whole ingredients.

Green Pastures’ philosophy is that the taste of the food should be the main focus.

At his restaurant, the food is exceptional and presented creatively. Duck, roast beef and chicken are cooked for as long as six hours.

The chef uses lardon and has rillette on his menu. He pulls his own cheese and what he cannot produce, he sources from reliable suppliers.

Chef Robby is a graduate of the California Culinary Academy. He owns and operates a total of eight Cyma Greek Taverna restaurants. His latest venture, Green Pastures, is on L/4, East Wing, Shangri-La Plaza Mall.
