Matam-ih
At the Clark Freeport Zone is Matam-ih, which in Aeta means “delicious.” It serves authentic Pampanga cuisine such as bule baluga, made by simmering white native beans in tomatoes and pork. Begukan babi is more commonly known as binagoongan baboy. Other dishes: fried catfish with buro (fermented rice), sinigang na bangus sa bayabas (milk fish simmered in guava broth), grilled pinaupong manok, nd pork sisig.
For the more adventurous diner, there is betute tugak, fried native frog stuffed with meat and vegetables, fried cricket, and adobong salagubang (beetles cooked in soy sauce, garlic, vinegar and onions).
