Miko Aspiras is no stranger to playing with ice cream. He did it with skill as the creative mind behind the plated desserts served at the Magnum Cafes in Manila, Kuala Lumpur and, soon, Brunei.
Aspiras, an award-winning chef, has a new treat for ice cream fans: Freezer Burn. “It’s not your ordinary ice cream place,” he said.
The newest venture of the team behind foodie favorite Le Petit Souffle and Hole in the Wall hits Scout’s Honor, Milk Trade and Garde Manger is a dessert bar opening tomorrow at Bonifacio High Street.
Aspiras and creative partner Kristine Lotilla are opening strong with eight solid flavors, whittled down from an extensive list of 45. “We make everything from scratch,” said Aspiras. “I’m really proud of that. They’re all really special. The flavors are heightened. We’re starting with eight of our favorites but we will introduce the rest of those flavors eventually. Every month we’ll have something new.”
Trying all flavors
We tried all eight flavors and enjoyed them all so much that we couldn’t pick a favorite.
Chocolate is crazy rich. Corn and Cheese puts together two of our ice cream favorites in one delicious bite. Maple Bacon is the perfect blend of salty and sweet.
Butter is a decadent delight. Browned Butter Pecan makes our tastebuds sing. The Best Mint Stracciatella is like eating Andes in ice cream form.
Cookies and Junk Food is like cookies and cream on steroids—so, so good.
And the Ketchup and Mayo ice cream? It really tastes like ketchup and mayo ice cream—and no, it isn’t gross at all.
While these inventive ice cream flavors may be enjoyed the traditional way (on a cone, with or without toppings, and yes, you can buy pints to bring home), you really have to try the stars of the menu: the composed desserts, at P295 each. Each ice cream flavor is paired with a hot dessert, creating a unique treat.
“From the start, my goal has always been to keep introducing new desserts to the Filipino market,” Aspiras pointed out.
Ola! pairs freshly cooked churros with a rich dark chocolate ice cream, a new way to enjoy what has become a Filipino obsession.
Order Morning Glory to try maple bacon ice cream with brioche toast and pop corn.
Junkie offers the perfect match for junk food lovers: cookies and junk food ice cream with Nutella donuts and caramel sauce.
Thick Mints pairs The Best Mint Stracciatella Ice Cream with a 5 Bite Brownie.
G’Day Mate is butter ice cream served with sticky date pudding.
BBPPBB brings together Freezer Burn’s browned butter pecan ice cream and a peanut butter waffle liege and banana.
We also enjoyed Cream of the Crop, which is another of Aspiras’ favorites. It’s corn and cheese ice cream served with toasted honeycake and cornicks.
Ketchup mayo fries
Our surprise favorite? Ketchup Mayo Fries—ketchup and mayo ice cream served with salt and pepper fries. We loved it so much though we normally don’t even dip our fries in ketchup. But who can blame us? It’s sweet, it’s salty, it’s creamy. We can’t wait to eat it again.
The packaging for the composed desserts is designed so you can enjoy them while you stroll along Bonifacio High Street. “But of course, customers are welcome to stay, too,” said Aspiras. “They can take pictures. Our interiors are super Instagrammable. All our walls work as background for your ice cream pictures.”
Even Freezer Burn’s door, which looks like an enormous fridge door, is social media-worthy. The interiors, the magnets, the cool aqua color and, of course, the ice cream, will make you feel like you just walked into the best fridge ever.
Freezer Burn will serve drinks too—ice cream floats (Cherry Dark Chocolate Spritz, Mint Chip Soda, Butter Root Beer Float, Orange Cream Soda), milk shakes, and what they call “the richest hot chocolate” (milk, white or dark).
“The drinks are stellar,” noted Aspiras.
Next month, there is a plan to introduce burnt coconut ice cream which will be served with calamansi ensaymada.
“Kristine and I really love dessert and we like sharing that with people,” said Aspiras. “There are more coming from us, here and also outside of Freezer Burn. We want to be ever changing.”
