Sofitel Hotel’s Spiral presents the hottest recipes for romance. Spiral’s 21 dining ateliers will feature saffron, ginger, basil, ginseng, ras el hanout cinnamon, vanilla, pink pepper, galangal, cayenne pepper, nutmeg, thyme, curry, coriander, turmeric, mustard seed, star anise, cardamom, shichimi (Japanese spice mixture), paprika and chili.

 

The French atelier serves saffron bouillabaisse, and braised veal cheek with carrot and ginger sauce.

 

The Chinese atelier features drunken prawns using ginger, Chinese cumin lamb and double-boiled ginseng soup with sliced abalone. The Filipino atelier showcases the combination of sweet and sour pork belly and spicy fried squid. The North Indian atelier presents bhatti murgh, lamb biryani, paneer tikka all laden with spices featuring nutmeg, cardamom and cinnamon.

 

“Spice Up Spiral” is available on Feb. 14 for lunch and dinner.
