Pujol comes next on my gastronomic journey around Mexico City

The gastronomic journey around Mexico City is far from over and it doesn’t just end with Blanco Castelar. Next on the list is the city’s finest, la mejor en Ciudad de México – Pujol.

A dining experience in Pujol is worth adding to any bucket list

Pujol frequents the list of The World’s 50 Best Restaurants, and with good reason. The highly-acclaimed fine dining establishment was opened in 2000 by Chef Enrique Olvera and is now headed by Jesús Durón, Pujol’s current chef de cuisine. The restaurant prides itself on its use of high-quality ingredients and its mastery of the various cooking techniques rooted in Mexican cuisine – one of which is the heavy use of the grill.

“Casi todos los componentes de nuestro menú pasan por el grill. Proteínas y verduras adquieren en la parrilla el sabor característico que dan las brasas” [Almost every ingredient on our menu goes through the grill. Proteins and vegetables acquire on the grill the characteristic flavor that the embers give], Pujol shares via Instagram.

For our time with them, we decided to go with their tasting menu, their Menu Degustación which consists of; Scallop Ceviche, Amberjack Al Pastor Tostada, Grilled Shrimp with Oregano Mole, Beans Tamal, Mole Madre and Mole Nuevo, and a Cherry dessert. By the end of the night, it baffled me how such a well-thought-out establishment such as Pujol has yet to receive a single Michelin star.
