Hoshino Coffee brings Japan’s kissaten culture to the Philippines

In a time where cafés are defined by speed, convenience, and aesthetics built for social media, Hoshino Coffee moves differently. Here, coffee is not rushed, meals are meant to be lingered over, and time seems to slow down.

The heart of Hoshino: Junkissa and Yoshoku

To understand Hoshino Coffee, one must first understand the cultural pillars it is built on: Junkissa and Yoshoku.

Junkissa, or “pure kissaten,” refers to traditional Japanese coffee houses that emerged after World War II. These spaces were designed for quiet moments with dimly lit interiors, slow hand-dripped coffee, and an atmosphere that encourages pause rather than rush. Coffee here is not just consumed; it is experienced.

Alongside this is Yoshoku, a distinctly Japanese take on Western cuisine. Rather than simply adopting foreign dishes, Japan reimagined them, transforming influences into something uniquely its own. Dishes like omurice, for instance, may trace their origins to Western omelettes, but have since evolved into staples of Japanese comfort food.

Together, Junkissa and Yoshoku define the Hoshino Coffee experience: a balance of precision, nostalgia, and indulgence.

According to Kengo Sakai, who oversees the brand’s Southeast Asian operations, Filipino customers use Hoshino Coffee differently—not just as a café, but as an all-day dining destination. Groups arrive in large numbers—families fresh from church, friends celebrating occasions, even gatherings spanning multiple generations.

This cultural shift has reshaped how the brand operates locally.

Menus have expanded beyond light café fare to include heartier meals like pasta, rice dishes, and desserts meant for sharing. Portions are adjusted, dining spaces are more flexible, and the overall experience leans toward inclusivity rather than solitude.

Where Japan emphasizes reflection, the Philippines embraces connection.

Stepping into Hoshino Coffee

Hoshino Coffee at SM North EDSA debuts its first-ever branch with a mezzanine dining area. This offers a more intimate experience while letting guests take in the café’s warm ambiance from an elevated perspective.

The branch’s thoughtful design draws inspiration from the traditional Japanese kura—a warehouse-style structure known for its high ceilings—perfectly complementing the new mezzanine space lined with bookshelves.

All these elements come together to create a warm, inviting ambiance, enhanced by the soothing sounds of Japanese bossa nova that echo the charm of the classic kissaten.

Sakai emphasizes the importance of intentionality in shaping Hoshino Coffee as a space where Japanese culture seamlessly comes together with the Filipino market in mind.

Hoshino Food Guide

At Hoshino Coffee, the essence of yoshoku is brought to life through a Philippines-exclusive menu of 90 offerings—ranging from signature coffee and pastas to decadent desserts and comforting rice meals.

Omu Souffle Tonkatsu Curry Rice

The fluffy omu soufflé pairs beautifully with crispy, tender tonkatsu, all complemented by richly seasoned, aromatic curry and served over perfectly steamed rice.

Exclusively available across Hoshino Coffee’s Philippine branches, this dish was inspired by the way Filipinos truly enjoy their rice meals, bringing together a harmony of textures and flavors in every bite.

Hoshino Spaghetti with Soy Sauce Butter

One of their bestsellers, aptly named after the brand, this standout spaghetti dish is easily a must-try. Perfectly cooked al dente pasta is topped with over-easy eggs, vegetables, and bacon, all brought together by a smooth, umami-rich soy butter sauce.

The dish is well-balanced rather than overwhelming, allowing the flavors of the soy butter sauce to shine through with every bite.

Mille Crêpes

This iconic Japanese dessert features 16 delicate layers of crepes, each filled with smooth cream that’s rich yet not overly sweet, striking the perfect balance in every bite.

Pro tip: Slice through the crepe horizontally to fully experience the indulgent layers and textures in one forkful.

Vanilla Pot-Baked Soufflé with Matcha Ganache

Served fresh from the oven in a ramekin, this soufflé offers a dessert experience like no other. Start with a spoonful of its warm, gooey center, then pour in the rich matcha ganache for a perfect balance of sweet and earthy flavors.

After savoring the molten center, enjoy the delicate outer crust. Every step is thoughtfully designed, allowing you to truly take your time and enjoy every bite.

Chicken Karaage

This is perhaps the appetizer closer to the Filipinos as we all love all iterations of chicken dishes. Hoshino’s karaage features a crisp, delicate coating that gives way to juicy, umami-packed chicken. An ideal start to any meal, it’s an appetizer you’ll keep coming back for.

Strawberry Pancake Soufflé Style

This picture-perfect dessert lives up to the hype. Two fluffy soufflé pancakes are stacked and crowned with fresh strawberries, vanilla ice cream, and whipped strawberry cream. The warm pancakes perfectly complement the cool ice cream and juicy strawberries. Truly an ideal way to end any meal.

Get to explore the wide range of Hoshino Coffee’s menu and indulge in hearty dishes like the Omu Rice & Teriyaki Chicken Steak with Salad, the rich Meatball Bolognese, or enjoy lighter bites such as the Shrimp and Avocado Sandwich. Perfectly cap off your meal with the soft and airy  Matcha Pancake Soufflé Style, perfectly crafted to pair with Hoshino’s signature coffee blends.

Hand-Drip Coffee – Hoshino Blend, Hikoboshi Blend, Orihime Blend

And of course, no visit to Hoshino Coffee is complete without sampling their coffee blends. Featuring a light roast that perfectly complements their signature milk cream, each cup is crafted to highlight delicate flavors.

They also take pride in their signature drip coffee method, inspired by traditional Japanese techniques, delivering a rich, aromatic experience in every pour.

Bridging cultures together

In many ways, Hoshino Coffee is more than just a place to eat or drink. It is a study in how culture travels… how it changes, adjusts, and finds new meaning without losing where it came from.

What makes Hoshino Coffee compelling is not just its commitment to Japanese tradition, but its willingness to reinterpret that tradition in a new cultural context.

Junkissa, once defined by solitude, now coexists with communal dining. Yoshoku, already a fusion in itself, continues to adapt; this time shaped by Filipino taste.

And yet, the core remains intact: a respect for craft, a focus on experience, and an understanding that food and space are deeply tied to culture.

Hoshino Coffee, since opening its doors in the Philippines in 2024, has grown to nine branches and continues to expand its presence in the local market.
