If you still have some chorizo sausages left over from the holidays, here’s one way to cook and serve them: Use them as stuffing for sandwiches.

 

After all, these Spanish sausages don’t always have to be eaten with rice. When tucked into a sandwich, chorizo makes a very rich, tasty filling.

 

To balance the richness, line the sandwich with lettuce leaves and add some onions and tomatoes. You can also try something different by using pita bread instead of loaf bread or pan de sal.

 

Also known as pocket bread, pita is a flat bread which opens into a pocket when the top is slit open.

 

Here’s a recipe for chorizo pita sandwich which you can easily make.

 

Chorizo Pita Sandwich

 

3  Spanish chorizos

2  tbsp olive oil

1  medium tomato, diced

1  medium onion, sliced into half rings

4  pita bread

4  lettuce leaves

 

Slice the chorizo into bite-size pieces. Heat the olive oil in a skillet and sauté the tomatoes and onions until tender. Remove the tomatoes and onions from the pan. Add the chorizo to the skillet and sauté until cooked, about one to two minutes.

 

Slit open the top of the pita bread to create a pocket. Heat the pita bread, one at a time, in a nonstick pan on both sides until warm, around 15 to 30 seconds each side (do not overheat so it doesn’t become brittle).

 

Line the pocket of each pita bread with lettuce leaves. Spoon the chorizo into the four pita bread, dividing equally. Add the tomatoes and onions (as much or as little as desired).

 

Serve immediately or wrap them in aluminum foil to keep warm until ready to serve. You can also pack these pita sandwiches as baon. They make a delicious lunchtime treat and are easy to munch on if you’re pressed for time.

 

If desired, serve the sandwiches with pickles. Makes four servings.

A great beverage to serve with this is a cool pitcher of sangria.
