Quick and easy-to-do desserts are always a welcome treat for kitchen enthusiasts.
This Naked Chunky Apple Banana Cake with Cream Cheese Frosting is one good example. It’s fruity and fun to make, and the best thing about it is, there really is no complicated procedure to it.
“You just dump everything in a bowl, mix well, bake, decorate and serve,” says chef Dorothy MJ Ferreria.
This cake combines chunks of apple and chocolate chips bound together with mashed bananas, which lend the cake more body and texture.
The tangy cream cheese frosting is a breeze to make. Again, just dump the butter, cream cheese and powdered sugar on the mixing bowl and let it blend well.
Ferreria, who holds private cooking, baking and cake decorating tutorials, and accepts food orders (tel. 9618682), says you can be as creative as you like when topping this beauty. Feel free to use your favorite decorating tricks to embellish the cake.

Naked Chunky Apple Banana Cake with Cream Cheese Frosting
½ c mashed bananas
2 c peeled and diced green apples
1 ½ c sifted all purpose flour
½ c white sugar
¾ c dark brown sugar
1 tsp cinnamon
¾ tsp fine salt
¾ tsp sifted baking soda
¼ tsp sifted baking powder
½ c + 2 tbsp corn oil
2 whole eggs
1 tsp vanilla
½ c raisins or chocolate chips
Cream Cheese Frosting:
½ c cream cheese
¼ c butter
1 ¾ c sifted powdered sugar
PREHEAT oven to 350ºF. Grease the sides of an 8-inch round baking pan with vegetable shortening. Dust greased portion with flour. Tap off excess. Line the bottom of the pan with baking parchment. Set aside.
IN A LARGE mixing bowl, mix together apples, flour and chocolate chips.
ADD mashed bananas, white and brown sugar, cinnamon, salt, baking soda, baking powder, corn oil, vanilla and eggs. Mix with a rubber scraper until well-blended.
POUR the cake batter into the prepared baking pan. Tap three times to eliminate air bubbles.
BAKE for at least 45 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely before applying cream cheese frosting.
TO PREPARE the frosting, combine butter, cream cheese and powdered sugar in a mixing bowl, using the paddle/flat beater attachment. Beat until blended.
SET the first layer of the cake on a serving platter. Cover cake with half of the frosting. Top with another layer of cake and cover this with the rest of the frosting.
YOU may also transfer the remaining frosting in a piping bag with 1M decorating tip and pipe out frosting according to preferred design. Refrigerate to allow the cake to set.
