SENTRO 1771 recently launched “Nanay Knows Best,” a promo in which people were asked to post pictures of their mom’s dishes, describe what twist was done to make the dish special, and include hashtags #sentro1771 and #SentroNanay.
Three entries each won a family dinner treat with their mothers at Sentro 1771 and meet its executive chef and COO Vicky Pacheco.
One of the winning entries was Jolly Dalusong’s Adobo with Oyster Sauce. Though adobo is often cooked with soy sauce and vinegar, for Jolly’s mom, oyster sauce upgrades the taste of this classic Filipino dish.
The Dalusong family had a lavish feast that included Sinigang na Corned Beef, Sizzling Tofu, Lamb Caldereta, Tilapia Fillets in Coconut Milk, Rated GG (galunggong), Grilled Squid, Keso Flan, Coffee Pie, and more.
Other winning entries were Dhess Mercado’s Relyenong Fish Steak and Clarice Cajuigan’s Adobo with Atsuete.
Sentro 1771 specializes in modern Filipino cuisine in a Commonwealth Period-inspired ambiance. Chef Vicky reinvents classic Filipino dishes and gives it a modern twist, drawing inspiration from everyday activities like talking to family and friends.
The sophistication of food from other countries can also be done to our local dishes, she says.
One of her signature dishes is Rated GG—fried galunggong drizzled with olive oil and topped with garlic. This was created after a normal conversation with her sister while recalling the dishes they used to enjoy at home.
One of Sentro 1771’s bestsellers is Sinigang na Corned Beef—corned beef short plate and boneless beef shanks cooked in tamarind broth with native vegetables. Before it is served, diners are given a taste of the broth so the chef can adjust its tanginess based on the customer’s preference.
