Actress Nikki Valdez bakes cakes as a business, and with the heightened restrictions last year due to the pandemic, she hurdled problems which she was able to find solutions to.
Valdez has returned to her cake business which she started in 2015 and shared her experience via her Instagram page yesterday, June 15, where she showed some photos of her creations.
“I [realized] I haven’t posted my cake creations in [a while] so here goes! Sorry if I will be flooding your timeline. I haven’t been feeling my usual self lately and doing this helps me appreciate my past errors and struggles— that you shouldn’t be too hard on yourself and downfalls are temporary ONLY if you push yourself to pick up the pieces again,” she said.
She recalled that she created a cake in September 2021 “at the height of the pandemic when it was so hard to cross borders from Manila.”
“This was supposed to be an all edible 3-tiered naked cake which I usually stack at the venue itself but due to heightened restrictions during that time, I had to come up with a solution that would not disappoint my client,” she recalled.

It took Valdez three “grueling days” before she can finish the cake with the help of florist The Flower Guy.
“Biggest challenge was to make the dummy cake look real and make sure it arrives safely all the way to Pangasinan!” she said. “Thank goodness, it did along with the other giveaways.”
Life, for Valdez, is “never meant to be easy; setbacks are inevitable but if you constantly teach yourself to find ways and not give up easily, you will surely rise after each fall.”
Aside from baking cakes, the actress is also into the bazaar business where she features her other food creations like Spam Rice bowls, brownies and breads. JB
