Baguio’s famed bakehouse and cafe Rebel is now open in Maginhawa, QC

No need to hike up north to taste their laminated pastries. Best of all, you can preorder to secure your croissants and danishes before they run out

Rebel Bakehouse is one of those new dining establishments that make going up to Baguio an even more exciting trip. Barely a two-year-old business that started as a cloud bakery, Rebel has become synonymous with freshly baked and inventive pastries that are worth the hike up north.

Luckily for Rebel fans in Manila, they’ve been doing pop-ups and collaborations with establishments like The Curator and Yardstick—their pop-up at Greenbelt 3 lasts until June. Then there’s the commissary in Maginhawa, which began as a way to smoothly deliver croissants and other laminated pastries to the doors of Manila faithfuls but has now evolved into a retail space with limited seating.

Located at 189 Maginhawa St., Quezon City, this Rebel Bakehouse branch is open from 8 a.m. to 4 p.m. daily. But best come early as their pastries sell out fast. Don’t be like me who came at 1 p.m.(!) to see the last of their leche flan danish go to the customer before me. Sad, I know.

Other than pastries, they have a pretty decent coffee menu for those who want to pair their buttery bakes with a drink. My go-to non-caffeinated drink is the chai latte but on that scorching afternoon, it was a relief to find a chai tonic on the menu which turned out to be a good summery, fizzy choice.

And if you can’t muster the energy in this blazing summer to commute to Quezon City to get your hands on Rebel bakes, you can always call them for delivery or to pre-order—the best way to get ahead of some pastry-hungry Rebel fans, if you ask me.
