MY son Diego has turned 12 and, through the years, I have enjoyed celebrating his birthday, making it as memorable as possible.
As he grows older, birthday menus have evolved—what is served are his favorites, not mine.
Popcorn, cotton candy and snow cones have remained staples. This year, I prepared a roast beef sandwich bar, pizzas, ice cream, sherbets, chips and cracklings.
I have also made it customary to call on the services of my colleagues and friends in the food business.
I shared Diego’s 12th birthday spread with Pancake House, whose assistant marketing manager, Kar Monedero-Bonggo, efficiently helped me plan the party.
But deciding which items to pick from Pancake House’s extensive menu was tough, especially when each and every dish was an all-time favorite.
I settled on Diego’s choices: Classic Pan Chicken with Gravy, Best Taco in Town, Spaghetti with Garlic Bread, and pancakes.
On the day of the party, the crew came early and the food was ready to be served at the appointed time. Portions were hefty; after service, the crew left their stations clean.
The tacos, pasta and chicken were good as expected. But it was the pancake, cooked on the spot as you ordered it, that was most pleasing. It was only at the party that I had it fresh and hot off the griddle—ultra soft and feathery light, it melted in my mouth. Slathered with butter and drizzled with maple syrup, it was heavenly.
Checking on the guests, I saw a wonderful sight as the kids devoured the food with delight while the adults savored every bite, just like children.
Degustation dessert
Capping the celebration were cakes made by Karen Young.
I like cakes with many flavors. Being a fan of small cakes, I asked Karen to whip up minis and cupcakes.
Aside from an eight-inch red velvet birthday cake topped with Diego’s birthday candles, there was sinful chocolate ganache and rich, sticky, toffee pudding cupcakes.
The guests likewise sampled Karen’s latest creations such as Raclette Japanese Cheesecake, Blueberry Sans Rival, Caramel Mousse Cake, Frozen Brazo Ubecado, Café Au Lait Mousse Crunch and Frozen Red Velvet Cookie.
Dessert turned out to be a degustation. What could be a happier sight than to watch the guests gleefully mix and match cakes, pairing them with sherbets and ice creams?
The party ended with our favorite personalized candies from Made in Candy.
What a lovely 12 years it has been for Diego! Happiest birthday, my dearest son. I love you!
