The deck to this recipe is a bit misleading: Filipinos don’t actually need tips on how to salvage leftover rice. We are, after all, a sinangag-eating nation. Nothing, not even day-old rice, could go to waste. Not when you have garlic and oil.

Jake Aycardo—who was one of three Filipinos to join the first-ever “MasterChef Asia” in 2015—however, is thinking of a Chinese-inspired fried rice recipe. This golden fried rice recipe gets its name from its abundance of eggs. In fact, it has enough eggs to make you forget about thinking of eating it with, well, eggs, as we would for breakfast.

But what really gives every grain a distinct lustrous sheen, Jake reveals towards the end of his Comfort Kitchen episode, is the addition of some butter.

Would you need a wok to perfect this recipe? No. But hand and eye coordination for tossing will definitely help keep the grains nicely separated. 

Golden fried rice

Ingredients

Day-old rice
Eggs
Soy sauce
Oil
Salt
White pepper
Red pepper flakes
Spring onion
Butter

Procedure

  1. In a bowl, mix rice and egg yolks until every grain is covered and colored yellow. Don’t throw away the whites! Add more eggs to them and beat lightly. Set aside.
  2. Preheat the pan (or wok) then add some oil. Throw in the rice and work through it with the back of a spoon to keep the grains separated
  3. Create a well in the center and add some oil. Pour the egg mixture then season with salt and pepper. Mix well.
  4. Add a splash of soy sauce and a sprinkle of red pepper flakes. Turn off the heat then add chopped spring onion.
  5. Take the pan off the stove, but before transferring to a serving dish, add some butter to the rice. Let melt from residual heat then mix. Serve and enjoy!
